It seems I'm on a bit of an Italian dessert kick right now, as well as my "cupcaking" kick.
To restate what cupcaking is- I take my favorite desserts and make it into a cupcake!
I was a bit nervous about this cupcake. I have had this idea stirring around in my head for some time now, but never could quite figure out how to execute it. Idea after idea was sketched down until I finally came up with a plan I was happy with. Once our little cupcakes were assembled and finished I figured our next step before allowing friends to go ahead and taste, was to have a very dear friend of ours (who just happens to be 150% Italian) come over and test try our creation....I was so nervous! His mother is a cannoli queen- she even made enough hand made cannolis to feed over 150 people, for his wedding!!
He loved it! And I mean loved it! So, it is a GO!
The cake itself has the flavors of a yummy cannoli shell: warming cinnamon, deep red wine, and cocoa. I then frosted each cupcake with a sweet ricotta frosting studded with mini chocolate chips (exactly what you would find inside of a cannoli) and topped each with half a maraschino cherry! No kidding, if you like cannolis- you will love and appreciate this!
