pumpkin cupcakes with spiced sweet cream frosting...



Phew it's been awhile since I've blogged!! We took a little week break- a much needed break at that- and having rested and relaxed a bit we're truly ready to go!!!

A dear dear friend of mine recently had her 26th birthday a little bit ago- and like any true friend (hehe) she wanted me to make her birthday cupcakes. She is completely in love with anything pumpkin or pumpkin scented- so naturally she asked for Pumpkin Cupcakes!

Shown are our Pumpkin Cupcakes with Spiced Sweet Cream Frosting! I played around and created a surprisingly light cake (you'd think having organic pumpkin puree mixed into the batter would become a tad dense- not here!!) with hints of cinnamon, vanilla, and nutmeg and then baked it to perfection! I chose to use real pumpkin, and not some extract or who-knows-what so that I was sure that not only is it moist and flavorful- but you're getting some vitamins as well (anything to make cupcakes seem "ok" to eat, right??)! I then topped the cupcakes with Sweet Cream Frosting- but gave it a little spice make-over for these yummy treats! Incredibly light and fluffy, with a hint of sweetness and pumpkin spice...this frosting paired absolutely perfectly with the Pumpkin Cupcakes. It's like a pumpkin pie- in cake form!!

I have to say here- I did not make the butterfly decorations, but completely loved my friend's suggestion of using them!! She had purchased the cutest Martha Stewart butterfly stickers at her local craft store and wanted me to incorporate them into her cupcakes before delivery. Being a friend, I happily agreed. They just looked so incredibly cute!!
