salted caramel makes me happy...

I've always said (and will continue to say) I love creative people! It's funny, after certain orders I'll say to myself, "Now why didn't I think of that??"...I guess that's a good thing though...I love being pleasantly surprised!

This was no exception. As I said in my previous blog, I recently did some cupcakes for my cousin's 15th birthday party. Everything about this order sparked creativity in me! She wanted Red Velvet...ok ok I got that one down...but she also asked if we had a Dark Chocolate Cupcake and a Chocolate + Salted Caramel Cupcake. "No we don't...but I can get to work on writing some recipes for them!!" So that's exactly what I did.

I love writing recipes! It's quite the challenge...but with some time, patience, good quality ingredients, and an ever so eager guinea pig husband (and friends) to taste test...things went relatively smooth. That is...if you call one small "teensie" break down during one of the trials of the salted caramel frosting going "smoothly". That's the fun part though...I actually kind of like when I'm at the point of "Ok...I can't do this..." and I take a breather to calm myself and collect all my culinary knowledge and experience (which at this point is in the most tangled, mumbled, mess in my brain) into a nice cohesive thought...Then like magic an "I know!!" comes to mind and back at it I go. The end result is always just what I wanted...not to mention a lesson learned. Again, this salted caramel frosting was no exception...

So with all that being said, I feel confident and proud to announce and share with you all my Chocolate + Salted Caramel Cupcakes!

Christina tested...husband, friends, and about fourteen 15 year olds approved!

For the lovely and unique frosting I had to make the yummiest homemade caramel sauce first! Deep amber colored vanilla bean sugar is brought to the point of almost burnt..then it's slowly mixed with rBST free heavy cream and allowed to cool completely..That's it! 2 simple yet perfect ingredients. This is the BEST "flavoring" for our yummy Vanilla Bean Buttercream, which is exactly the base I decided to use! rBST free eggs, rBST free sweet cream butter, homemade vanilla bean extract and vanilla bean sugar make up this delightfully sweet, light, and mousse like frosting! No artificial preservatives or colorings, or added hormones or antibiotics are anywhere near our stuff! Simple..pure...and so very yummy. Lastly, just the right amount of Fleur de Sel (salt) is added to give the caramel frosting that desired and loved salty hint. It's so good!

I know I say this a lot...but seriously...you guys gotta try making this!
