I hope you all had a fantastic weekend, and an even better Father's Day!
For my dad's Father's Day present, I decided to make him his favorite- Cherry Pie...but re-worked a little so he could actually eat it! Hence the "sugar free" and "whole wheat" part! He's always asking for cherry pie whenever we all get together as a family- but usually any pie (or dessert for that matter) is filled with sugar and white starches. Sugar + White Starches = No Good!
In this particular pie I used juicy black cherries (they're in season by the way!), organic lemon juice, homemade vanilla bean extract, some corn starch, and a little bit of stevia. Mixed it all together gently and added to my homemade whole wheat pie crust. A good substitute for the real thing, I'd say!
