happy birthday + cupcake in a jar...

It was a very dear friend of mine's birthday the other day. I love birthdays...doesn't matter if it's mine, or someone else's...I just love them. I find myself planning for my friends' birthdays WAY before they are! I can't help it.

So when I knew it was going to be this particular friend's birthday I started brainstorming about what I wanted to get and do for her so she felt really special on her day. I knew two things right away: 1. One thing had to have Hello Kitty and 2. One thing had to be a red velvet something or another. She loves both! I won't bore you with the details of her presents (yes Hello Kitty was included) but I will share this little aspect of it- a couple Cupcakes in a Jar!

Cupcakes in a Jar are becoming pretty popular right now! I've done them a few times in this last year but boy are they really taking off these last few months!

So for my sweet friend's birthday, I decided to make her a Red Velvet Cupcake in a Jar and a Lemon Meringue one (to go with the summery season). The red velvet is what you would expect: layers of our own red velvet cake and our very popular and much loved cream cheese frosting. This little 8oz jar is STUFFED to the rim.

The lemon meringue is made with layers of our vanilla bean cake, vanilla bean buttercream frosting, and homemade organic lemon curd. Yummy! Light, fluffy, and tartly sweet!

Then each jar is finished with twine and a disposable, recyclable spoon for easy digging into!

Happy birthday my friend! I hope it was a....sweet one! ;)
