salsa fresca marinade...

So I've been listening A LOT to The Lumineers, lately. 

What started as a "huh, this song is pretty neat" very quickly became an obsession of pure delight! Gosh I just love them! From "Flowers in Your Hair", to "Stubborn Love", to "Big Parade"- nothing get's me in the creative spirit like them! (right now) Well, and then there's Mumford....but that's a different blog. 

I mean lets look at this morning!

I woke up. Made a BIG cup of Breakfast Tea, sat down, did a devotional and spent some time with my heavenly Father. Then I got dressed and (gasp!) made the bed. Pet my kitties, brushed my teeth...and then sat down at the computer. Started my iTunes and what comes on but The (freaking) Lumineers. 

BAM!, like a quick shot of the strongest (and most delicious) cup of espresso- I'm in blogging, creating, editing, photographing mood!

Love that.

It made editing these pictures of some amazingly delicious easy salsa fresca, just a pleasurable experience! As it should be. 

You guys, this stuff is seriously delicioso. See what I did there? AND EASY! THIS IS SO EASY!

You basically take a few fresh ingredients, ones you most likely already have, and puree them into oblivion! Done and done. Pat yourself on the back and do a little jig, you're already on the road to Success-Ville. Not to mention, Healthy Success-Ville! I mean, there's like 3 measly tablespoons of oil in the whole thing- which makes enough marinade for a couple of dinners, if you ask me!

It's like a mix between salsa (duh), a vinaigrette, and a marinade, but all in one. You can use it to spruce up black beans or rice, smear it on meat (veggies or tofu) and grill it, slather it on said proteins and bake as is...I mean I can go on and on. EAT IT WITH TORTILLA CHIPS, DIP QUESADILLAS IN IT! 

You get the point. Make this stuff, honestly. Make and eat and enjoy and dance and sing...

And listen to The Lumineers while doing so.

Makes about 2 cups

  • 1 pint fresh organic grape or cherry tomatoes, washed and dried
  • 1/4 small sweet fresh onion
  • 1 fresh garlic clove
  • juice of 3 fresh limes
  • 3 tablespoons good quality olive oil
  • approximately 1 cup fresh cilantro leaves- just grab a bunch and twist off of stems (some stems ok)
  • 1 teaspoon sea salt
  • 1 tablespoon honey
  • 1-2 pinches red chile flakes (depending on how hot you like things)

1. First things, first. Make sure any and all produce is washed and dried :) 

2. In a food processor add your onion and garlic. Process about 15 seconds, stop, scrape down, and process again. 

3. Next, add your tomatoes, lime juice, olive oil, cilantro, salt, honey, and chile flakes. Process 1-2 minutes, or until everything is thoroughly combined. 

4. Like stated earlier, you can rub over meat, veggies, tofu, or fish and allow to marinade a few hours, in the fridge. Once you're ready, you can either bake as is, or lightly brush off and grill away!

Save some, and store for dipping later on!

Store in an air tight container in the fridge for up to 5 days. Also great spooned into black beans or brown rice, or eaten with freshly made tortilla chips!
