gluten free apple cinnamon dutch baby style pancake...


With autumn in full swing now, I find myself craving all sorts of warm, inviting, comfort foods. 

We're talking casseroles, stews and dinners cooked long and slow... Roasted root veggies, deep flavored dishes, and cinnamon, ginger, allspice, nutmeg and clove spiced foods. Oh and don't forget all things pumpkin and apple. It's a completely natural reaction to the season. Without really thinking about it, whenever I bake or cook during the fall, I absentmindedly grab those quint essential fall flavorings. 

Like this dutch baby style pancake. Something so lovely only becomes more wonderful with autumnal apples, cinnamon, and deep flavored coconut sugar throughout. I'm in love with coconut sugar right now! It has a sort of molasses/brown sugar flavoring to me and is filled with so many natural health benefits! 

Like:
  1. It is low glycemic (slow absorption in our blood stream)
  2. Includes magnesium and nitrogen (which also regulates blood sugar levels and blood pressure)
  3. Has zinc (good for mental development)
  4. Potassium (hello, electrolytes which help with muscular strength, cramps and diabetes)
  5. Calcium (which builds strong bones, reduces high blood pressure and kidney stones) 
  6. Includes about 16 different amino acids! 

Phew! That's enough for me to start including it in my life. It's pretty sweet too; you can use it 1 for 1 with granulated sugar. Meaning if a recipe calls for 1/2 cup sugar, try a 1/2 cup of coconut sugar instead! I'm totally loving the Big Tree Farms brand which you can buy online, on Amazon, or at your local health food store (which is what I did).

This was supposed to be breakfast but turned into dinner. Ooops, but not really. We totally love eating breakfast foods at all times of the day. It's an easy peasy meal too. Double score.


GLUTEN FREE APPLE CINNAMON DUTCH BABY STYLE PANCAKE
Serves 4-6

For the apples:
  • 1 medium to large organic Gala apple, washed, dried, cored and chopped into bite sized pieces (or about 1 1/4 cups)
  • 2 tablespoons coconut sugar
  • 2 tablespoons melted and cooled coconut oil
  • 1/2 teaspoon ground cinnamon

For the batter:
  • 3 large eggs
  • 3 tablespoons coconut sugar
  • 1 cup whole milk
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • pinch of sea salt
  • 3/4 cup good quality gluten free all purpose flour (I used Cup 4 Cup brand)

1. Preheat oven to 400°F and place oven racks in the center of the oven. Lightly grease a 9" deep dish pie pan or cast iron skillet and set aside.

2. In a medium bowl, toss together the apple chunks, coconut sugar, coconut oil and ground cinnamon. Place chunks into your prepared pie pan and place into oven for 5-6 minutes.

3. While that is baking, in another large bowl, whisk together your eggs, coconut sugar, milk, ground cinnamon, vanilla extract and sea salt until thoroughly combined. 

4. Next, add in the gluten free flour and whisk together quickly and just until all lumps are gone. 

5. Remove pie pan from oven and immediately pour batter evenly over entire surface. Your pie pan should be piping hot which will help the Dutch Baby part of this pancake happen! It starts to cook and seal the edges and makes the sides rise and puff while the middle continues to cook. Make sure your pan is straight out of the oven :)

6. Bake in the oven for about 25 minutes or until top is golden brown and edges are puffy and lifted! Serve immediately with a drizzle of maple syrup or honey, as it will deflate pretty quickly.

*Results may vary depending on the type of gluten free flour used. Make sure you know and love your gluten free flour well. I recommend using Cup 4 Cup for best results.

My husband and I totally devoured our slice and helped ourselves to seconds. I'll blame it on Baby Main. This pancake has a somewhat custard like texture, is subtly sweet and very slightly chewy. Then with those little bites of tart cinnamon apples bursting throughout? Yum to the O. Since they cooked on the bottom of the pan, they caramelize a tad creating the most comforting flavor combination. 

I highly recommend making this dish right before you plan on serving. Like with most dutch babies, they inflate while in the oven (which looks awesome) and then deflate within mere minutes once removed. So plan ahead, set the table beforehand, make, slice and serve immediately :)


Gluten free and refined sugar free doesn't mean it has to be boring.
