super quick + creamy cashew milk/creamer...

I feel like I just life hacked guys. Like, the world didn't want us to know about this recipe, but then by some weird series of events, I found the hidden secret. And I can't wait to share it with you!

Tell me I'm not the only one- it's the morning and you're going to make your breakfast smoothie and/or cup of coffee/matcha and low and behold- you're all out of your favorite dairy free milk. No? Just me? I mean it, there are few things worse then trying to groggily make some breakfast and wake up fuel with a demanding toddler, and you're out of your milk. It's like, who can seriously adult until they've adequately woken up with their favorite caffeinated (or decaffeinated) beverage and proper breakfast? Not I.

ANYWAY, this dilemma has happened to me, MANY a time. I guess the better lesson learned should be- go grocery shopping a bit more frequently, Christina. So one day I was sitting at the dinner table eating with my husband and son, sort of drifting off into LaLa Land as they were doing their nightly, "Daddy, tell Lukey a joke!" when it hit me! Whenever I make cashew milk, I'm soaking them for hours (up to overnight) and then blending...but what if we skipped the whole soaking for hours phase and used already soaked and blended up CASHEW BUTTER? Would that work??

Right?!!??! RIGHT?!?!?! I couldn't even stand the thought of not trying it out right then and there. AND IT SO WORKED! We mamas don't always have it together and trying to remember to soak our cashews the night before we need to make more milk, well...that sort of preparation gets lost. At least it does with me. 

So I am beyond thrilled to know that I can now make a small batch of cashew milk for the day (or morning) in a pinch this way! I wouldn't go making cashew milk this way solely, because raw cashew butter is a bit pricy. BUT if in a pinch, you've forgotten to soak your nuts and are out, this works wonders and is so yummy! This also makes a mean jar of homemade cashew coffee or tea creamer! Because it's so incredibly creamy and subtly sweet from the natural sweetness of the cashews, it really brings your hot beverages to the next level. I WOULD indeed make it this way solely for that purpose and always have a small jar or so in the fridge for this very thing. 

If you like things a tad on the sweet side, try it with some raw honey! Want it vanilla bean flavored? Add some good quality extract. You do you friend. But as for me, I loved the amount of sweetness it gave naturally and am seriously going to keep a jar in the fridge at all times now so that I can add a creamer to all my coffees and teas!

1. This couldn't be easier to make guys. You're going to get a blender and add the cashew butter and water to it (and honey, vanilla if using) and blend on high speed for about 30 seconds. Boom, you're done. Shake or stir well before using.

*Note: I can only vouch for Artisana RAW Cashew Butter working. I know other stores sell toasted/roasted cashew butters and I would stray from those. Try and find a RAW butter and get Artisana if possible. The ingredients in this butter is literally: cashews. No salt, no added oils, nadda.
